Like so many others, Kathleen and Todd were doing the corporate thing in the States, and realized they needed a change. Owning a business in Mexico is not always for the faint of heart, but for a couple of motivated ice cream lovers, there simply couldn’t be a sweeter life.
Kathleen and Todd moved from chilly Chicago to Puerto Vallarta in December 2016. They purchased Lix Ice Cream — a thriving business established in 2012 — a month later, and the adventure began! In 2019, they opened a second Lix location and production kitchen in the up and coming neighborhood of Fluvial, which allowed them to take over the full ice cream-making process, from start to finish. In 2020 they opened a third store on the Malecon, which also serves Mexican organic coffee, shaved ice drinks, and Cacao Magico’s artisan chocolates.
